Hi all,
I know it's been a while, but I'm hoping to get back to posting our recipes on a more regular basis! Two new recipes have been added by Tiffany (she sent these to me a while ago, so I apologize that it took so long to get them up!). Check out Simply Roasted Pork under Beef and Pork in Main Dishes, and Mediterranean Turkey Burgers under Poultry in Main Dishes. Oh, and by the way, I recently tried Tiffany's recipe for Slow-Cooker Red Beans and Rice, and it was delicious! Thanks to Caitlyn and Tiffany for participating in our first giveaway! As the next generation of wives, it is important to consider healthier options when cooking in the kitchen. Healthy eating is not only important for our waistline, but for overall health. We need to be mindful of what we put into our bodies. Since starting to cook I’ve searched for healthy options. Here are a few substitutes that replace some of the old favorites with some lighter, healthy, and delicious options: 1. Greek Yogurt – I buy Chipotle Greek Yogurt and use it in place of sour cream. I do not eat it by itself, but it tastes great to add a dollop in cream broccoli soup or on an oven baked enchilada. At the Dagenhart house, we’ve substituted the sour cream in a poppy seed chicken recipe with Greek yogurt and it tastes delicious in chili too. 2. Ground turkey meat – instead of beef tacos, cook up some turkey meat in the frying pan and then add your favorite taco toppings and enjoy. We also use ground turkey in a Sloppy Joe recipe. It can also be used in a meat sauce for spaghetti or in chili. 3. Nonstick spray – takes the calories and fat away from greasing a pan with butter. **not suitable substitute for everything, but works 4. Whole wheat Panko breadcrumbs – better than regular breadcrumbs and tastes great in homemade meatballs 5. Lower sodium foods – broths, soups, condiments can sometimes be loaded with salt. Be sure to look at the nutrition facts to check. Looking for “lower sodium” or “no salt added” can help. I would be careful about “salt free” cause if the sodium is gone then something has been added to maintain the flavor. 6. Lower sugar foods – I love a bowl of cereal in the morning! And I’m learning that when buying cereal I need to look at the nutrition facts, especially at the sugar amount. I try to steer clear of cereals with more than 12 grams of sugar. I’ve found that Honey Bunches of Oats (Honey Roasted or Pecan bunches) has about 6 to 5 grams of sugar and tastes amazing!! Also be sure to check the nutrition facts when something says it’s “sugar free” – usually the amount of sodium spikes to maintain taste. 7. Whole wheat pasta – I hardly buy regular pasta and I’ve found that whole wheat pasta has a heartier taste. I have one more recommendation. My husband bought me a cookbook I had been wanting that offered healthy recipes for some old favorites. I would really recommend the cookbook by Rocco Dispirito called “Now Eat This”. It has a lot of recipes and my husband and I have enjoyed all the ones we’ve cooked. Happy Cooking! Submitted by Tiffany I come back empty handed each time I try to find basil in my local grocery store. To my dismay, I have yet to try that healthy version pesto sauce with my whole grain noodles or a refreshing spring salad from the Southern Living magazine that just asks for a little fresh basil. I sigh in sadness every time I see the following words “1 cup of fresh chopped/torn basil”. Why? Because I can NEVER find basil in at the grocery store. Perhaps it is too great a demand to have this fresh herb provided during my weekly visit to Ingles, but I have not given up. Instead of buying it I hope to grow it myself! And thanks to advice from Nicole’s husband and some information from Southern Living – I may finally be able to make that pesto sauce. I wanted to share with you ladies a link to growing your own basil at home – in case you too have not been successful in finding this herb.
